For baking that should look and feel like real baking, allulose — or a monk fruit blend built on it — is the standout, because it browns and holds moisture the way sugar does. For sweetening coffee and tea for pennies, a stevia or monk fruit product wins on concentration. Erythritol remains the budget workhorse of 1:1 blends, with a cooling aftertaste as the toll. Why does allulose bake so differently?

Because chemically it’s the closest thing here to sugar itself. Allulose is a so-called rare sugar that “browns, caramelizes, and dissolves like sugar” and is “excellent at locking in moisture,” per Wholesome Yum’s guide — the two behaviors that make cookies chewy instead of chalky. Erythritol, the old default in 1:1 baking blends, does the opposite on both counts: it “can crystallize, leading to a gritty texture” and tends to dry bakes out, alongside the cooling sensation many people notice in erythritol-heavy frosting.

Allulose also has an unusual regulatory position. The FDA has said it will exercise enforcement discretion for counting allulose at just 0.4 calories per gram — a tenth of sugar — and for leaving it out of the Total Sugars and Added Sugars lines on nutrition labels, though it still counts toward total carbohydrates. That’s why an allulose-sweetened label can read “0g added sugar” while the bag pours and measures like the real thing.

Where do stevia and monk fruit fit?

These two are concentrates, not bulk sweeteners — hundreds of times sweeter than sugar, so a bottle of drops or a small jar sweetens months of coffee. The taste divide is consistent: pure stevia “can have a bitter aftertaste, especially in its pure form,” while monk fruit carries less of one, per Wholesome Yum. First, the blend format isn’t just about measuring convenience — pairing a high-intensity extract with a bulking agent roughly halves the cost of sweetness versus buying pure allulose.   • Stevia: the bitterness is real and brand-dependent; expect to try more than one before it disappears into your coffee.
